The advantages of gas hobs

The gas hob is the cooking system the oldest but which remains timeless. Indeed, most catering professionals still use this system ... and this is no coincidence! In fact, the gas hobs offer high-precision cooking with an immediate halt in the diffusion of heat as soon as the gas is cut, unlike the electric hob which continues to heat.

Another positive point of gas cooking: with it, it is possible to instantly change the cooking temperature of food thanks to a visual control and an integrated ignition system.
In addition, the thermocouple safety system automatically stops the gas supply when the flame is out.

Suddenly, the gas hob is a good solution if you are connected to the city gas network; otherwise, don't panic: it can be fed by a gas cylinder. Gas hobs are generally sold with 2, 4 or 5 burners (you can add a burner for the wok). Their power varies from 800 to 3,500 Watts. On the price side, there are very cheap gas hobs to buy (from around € 150).

The negatives of gas hobs

The gas hobs are restrictive in terms of cleaning because the burners and grates are difficult to access. It is therefore preferable to use powerful cleaning products.

On some burners, the low heat can remain quite strong; better not to take your eyes off its preparation too much! In addition, this cooking system is also less practical for placing pots and pans than on other types of hobs.

The positive points of electric hobs

The electric hob is, with the gas hob, the most common type of hob. Inexpensive, robust, the electric plates are very easy to use. This is what makes their success, and which explains why it is the ideal system for a first home for example.

The hotplates operate with an electrical resistance which emits heat. Very solid, the cast iron plates do not fear shocks. In addition, there are different formats: 1, 2 or 4 plates and different diameters; as such, the larger the diameter, the higher the maximum power (it generally varies between 450 and 3000 Watts).

The electric plate heat is modulated according to the intensity of the electric current. Its installation (simple connection to an electrical outlet) is accessible to all, as is the price which is very affordable (around 150 € for an entry level).

Weak points of electric hobs

In the long term, the electric hob is not suitable for elaborate cooking because it is of low performance, heats more slowly, and it takes a while to cool down.
With an electric hob, any preparation, even basic, will therefore require more patience than with gas hobs!

The cleaning the hotplates is also a sensitive point, especially in the event of liquid overflowing on the plates; traces hang on the cast iron, which requires regular maintenance.
Last but not least, there is no safety system in the event of overheating on the electric cooking plates.
